One advantage with Otogo Shochu is that it will retain its flavours and aromas over long periods because it is a spirit. In contrast, sake starts to lose its most flavoursome aspects the moment you open the bottle. 
What is unusual about this particular style of shochu is that it is made entirely from rice. Other shochu is made from barley, potatoes or even soba noodles. Kuma Shochu is also a craft spirit and matured using techniques developed over many generations by skilled craftsmen and women.
The use of rice as the main ingredient, together with yellow ‘koji’ and ‘ginjo’ yeast, gives Otogo Shochu a distinct ‘sake-like’ flavour and aroma.
Otogo Shochu has accents of pear, cantaloupe melon, with the aroma of aniseed, banana and walnut. The palate is crisp and clean with a faint sweetness while its colour is a pure water-white. Half the pleasure of drinking shochu comes from its complex aromas.
